@Anna Etienne It does not taste like coconut. We use whole fat coconut milk or coconut cream in a can. You can also use vegan butter and vegan mozzerella which are both readily available in supermarkets.
That looks painfully delicious! I will have to make this after the holidays as I already have my meals prepared and planned. This is truly the only way a veggie casserole should be done🫡
I made this just a few hours after seeing the recipe and yowza! So good. I left out the carrots and only had half an onion, but it was still so good. I think next time I'll add just a tiny bit of cream cheese to the roux to give it a little kick, but its definitely not necessary. This is something I'll make often. Thank you!
I do a similar vegetable bake adding finely chopped bacon with the onion. The white sauce I do with white wine, a teaspoon of Dijon mustard, cheddar cheese and panko bread crumbs crumbled on top which gives a crunch to counter the texture of the soft potato. I always leave it 30 mins to darken the crunch and cheese sauce.
@BushyIV no. Only half a glass to slacken the flour and butter mix and after it cooked a couple of minutes to cook the flour. The rest milk and a chicken stock cube added at the end. This is a classic Béchamels sauce. Good luck. Dijon in with the sauce - about a heaped teaspoon. Cover all veg and onion/bacon mix then sprinkle panko. Crispy topping. Mmmm
Novice here: Do you sub the wine in the same amount as the chicken stock? How do you add the dijon mustard, are you mixing it with the cheddar and panko before topping the casserole?
I tried this recipe and it was absolutely delicious. I added a couple of shallots, some fresh garlic and a couple of green onions for my own touch. My company loved it and now I have been sharing the recipe. Thank you

For our taste I may add a bit more onion and maybe a clove of garlic and replace half the mozzarella with a stronger cheese like Gruyere or Comte. If I could get lovely German/Austria Bergkase in England then I would use a bit of that instead ! ❤

I am African. I just wanted something different from the regular food that we eat and I stumble on yours. I made it,it was wonderful. Everybody in the family enjoyed it. I had it with baked chicken and steak. wow it was delicious.

Not to me. I think it looks disgusting, and that batter or whatever it is supposed to be -- never. Let alone adding the most flavour-free cheese in the world -- aside from perhaps Monterey Jack. It MIGHT work for me with a better batter -- flour and eggs, basically, and certainly no milk -- and a sharper cheese, like cheddar or parmesan. I watched it through -- how I hate videos that show you all the chopping, unless there is a special technique being employed -- but the longer it went on the less I liked it. Sorry, but it's just not for me. (And I don't see basil as especially compatible with those veggies).
Was good! Will definitely make again! I only used 4 Tbsp. Unsalted butter & and didn’t have the French herbs so I seasoned with basil & lemon pepper. I also used less salt too. I would clean & cut the veggies the day before next time just to save on time & I don’t think I would use the cheese. I think it’s great without.
Looks amazing. Reminds me of a casserole I make with California frozen veggies with mushroom soup and cheddar cheese but yours looks so much more healthy and substantial.

I made this Sunday,I used Italian seasoning substituting it for the French herb,(the store didn't have the French herb) and it really was delicious!!! and fulfilling. Thanks for the recipe!!!
What happened with the pear in the written recipe? Also, wouldn’t it be easier to mix the veggies and sauce in a large bowl before adding to the baking dish, then topping with the mozzarella?
I really don't like vegetables but I'll try this one. You have all the veggies that I like in here...except for the carrots but that shouldn't stop me from liking this recipe. Thanks for sharing ❤️😋

I've made this casserole twice! My family loves it. I've swapped out milk for coconut milk because we can't have dairy and it's still super delicious.
You could use Almond milk
I think it does. You could try using oat milk instead. Much more like “real” milk to me.

Coconut milk or coconut cream always the best and smell 👍 we use to in the curry,or we make some of dessert with it 👍👍👍

😋 I luv the veggies combo...The only difference I would do is include the slice carrots into the boiling water to make it more tender

This is an excellent casserole! May I also say that your vegetables always look to be of very good quality, especially the cauliflower.
My mother used to serve this every Boxing Day with the cold turkey when we wer growing up in the 1970s.

The key is using all fresh vegetables,try not to use anything bagged or canned,it may be convenient or faster,but the taste is better with fresh.😊😊😊

Look for "Herbes de Provence". Even WalMart has that. That is the "French" she is referring to. Also: skip the basil and use parsley instead.

I don't like carrots unless they're are soft, so as one comment I read, you could cook them in with the water.
